You know what isn't overrated? Phad Thai.
It is simple, relatively easy to make, and positively delicious. It also translates directly as "fried Thai style," leaving the dih very much open to interpretation.

I recently moved to a nice apartment on Sukhomvit Soi 1 in Bangkok and the best thing about my apartment is the cheap street down the road stall serving, arguably of course, Bangkok's best phad thai.
It is made by a kind young woman, who vigorously stirs 3 or 4 portions in one gigantic flattened wok. A somewhat unique twist on the standard, she offers her stir fried rice noodles with shrimp, squid, and shucked mussels.
A true delight.
If you are walking from the intersection of Sukhomvit and Sukkomvit Soi 1, you can find her on your left, about a 3 minute walk up the block. She is unmissable, just follow the crowds.
