Seafood Phad Thai
You know what isn't overrated? Phad Thai.
It is simple, relatively easy to make, and positively delicious. It also translates directly as "fried Thai style," leaving the dih very much open to interpretation.
Interpret away my fellow Bangkokers!
I recently moved to a nice apartment on Sukhomvit Soi 1 in Bangkok and the best thing about my apartment is the cheap street down the road stall serving, arguably of course, Bangkok's best phad thai.
It is made by a kind young woman, who vigorously stirs 3 or 4 portions in one gigantic flattened wok. A somewhat unique twist on the standard, she offers her stir fried rice noodles with shrimp, squid, and shucked mussels.
A true delight.
If you are walking from the intersection of Sukhomvit and Sukkomvit Soi 1, you can find her on your left, about a 3 minute walk up the block. She is unmissable, just follow the crowds.

Inauguration
I'll try to avoid politics - but today it is unavoidable.
After 8 years of Bush league policies, we're getting someone who would rather debate Constitutional Law than mow their lawn.
Obama, the hopes we have in you, and your vowel laden name, are great.
Can you extract us with dignity from Guantanamo and Baghdad? Can you create those millions of lost jobs? Will Global Warming be curbed under your watch?
I think I'll fast tomorrow, January 20th. I haven't fasted since I was a child, but something about fasting tomorrow seems apropos. And apropos that's another vowel laden word that I'm a big fan of.
Tonight I decided to cook one of my favorite Thai dishes - fried ginger chicken.
A fairly easy dish, start with heating oil, sauteing onions and garlic. Through in your chicken. Cook fully. Then through in straw (shitake) mushrooms, ginger, and a bit of water. Cook for 2 more minutes. Then through 1 part soy sauce, 1 part fish sauce, for 2 parts oyster sauce - and plenty of spring onions and at least 2 of the hottest peppers you can find.
Now, I know how imprecise that may seem, but it is all flavored to taste, and what make sense for you.
My recommendations for this dish include : cut your ginger into thin strips. Between 1-2 centimeters (1/3 inch) and thin. Also, cut up your hot pepper very finely. Lastly, do the whole thing in a wok if possible!
Also, you can eat this extra healthy with brown rice. If you want to go extra healthy, steam up some peas and throw that in with your rice before you pour your fried ginger chicken on your rice - that adds some nice greens to this dish.

Two in Two Days!
Who know I had it in me? Another attempt at writing an article in two days!
It'll probably take me at least a week to produce an article that isn't shameful. There's a reason I'm not a professional writer.
I'm not going to spell it out for ya, but if you follow this blog for another week you'll know why.
Food wise last night I cooked a solid vegan friendly rice and beans dish. Mostly it was rice, black beans, stewed tomatoes, flavored with copious amounts of thyme, oregano, coriander, basil, garlic, onions, 3 different kinds of pepper (give it plenty of chili!). The trick was, after the rice was 95 percent cooked, to combine the sauteed onion, garlic, tomato, bean and spice concoction with the rice. Let it stew all together in there, and top with fresh cilantro, tabasco sauce, and perhaps some shredded chedder.
Stood alone well enough, better if wrapped in a toasted flour tortilla with lettuce.
Hppy eating!

First Blog Ever
Is it wrong to admit that I'm 25 years old and this is my very first blog?
Is it wrong to admit that I've never really read blogs? Even the blogs of friends?
Worse than that, that I don't necessarily subscribe to their underlying philosophy?
Tough noogies bloggosphere, because now I have a reason to write!
Self promotion, what else!
The main reason I'm doing this is to document my first foray into the world of entrepreneurialism. So far it's been a very valuable experience, as I now know how to spell entrepreneurialism.
But seriously folks, check out the world's best culinary experience in Thailand at www.globaltastetours.com
